Le Mesnil sur Oger only on the heart of the Terroir and on plots selected below :
Les Vaucherots, Les Coullemets du Midi, Les Finciarts Les Chétillons are plots with very low yields,
5000 to 6000 KG Ha maximum which produce grapes of great depth, total acidity
important, and low PH which allows us to pick them very late and therefore at full maturity.

Method
Vinification and aging on lees for 8 months in small barrels of 228 liters aged about a dozen years - Regular batonnage. Without malolactic fermentation. Prolonged aging on lees in bottles (6 to 8 years).
